Fantastic Fajitas

Chicken fajitas are a Flick favorite. They're pretty easy and make you feel nourished and healthy when you eat them. Anything is easy once you get in the habit of doing it. Fajitas or tacos is something that Michael and I could cook blindfolded with one arm tied behind our backs. And since peppers and onions are Michael's favorite vegetables, this dish a staple in our home.

Here's how we do them in our house.

Penzy's Fajita Seasoning
Garlic Powder
Celtic Salt
Fresh Ground pepper
Bell Peppers
Raw Milk Kefir
Raw Cheddar Cheese
2 Tablespoons Tallow (epically delicious rendered cow fat)

The How To:
Season your chicken with great liberality and cook it in your cast iron skillet with the melted tallow.

Put your bell pepper right on the burner and cook it till it chars. I guess you can get fancy and use a skillet on high or the oven on broiler if you like.

Fry onions in the left over tallow and chicken seasonings in the skillet.

Grate your cheese and make the dinner look pretty.


Cooking with tallow is wonderful. It add a depth of flavor to all foods cooked in it. Its just subtle awesomeness. Its umami. You know, the soy sauce commercials? The fifth taste. MSG. Lol. Tallow is super natural umami goodness.
